Cherry is delivered by 700 independent outgrowers — mostly organic smallholders farming 2–5 hectare plots under native shade trees — from the nearby village of Dambi Uddo.\u003c\/p\u003e\n\u003cp\u003eEach lot is hand-sorted, floated, pulped within 6–8 hours of picking, fermented for 36–48 hours, re-washed, and dried on raised beds for 5–7 days — earning it a Grade 1 classification, the highest quality grade for Ethiopian coffee.
