Brew guide

  • Espresso

Dose 18–20g into the basket, aim for 36–40g out in 25–30 seconds. Sunrise and Outlaw are both roasted for milk and black. Sunrise is our medium body coffee roasted for sweetness and balance. If you like your coffee a bit stronger Outlaw will be your go-to.

Our light roasted single origins will yield longer 45-60gm, to balance out fruit acidity and sweetness. On an EK43 aim for 23 seconds.

  • Pour over

Medium-fine grind, 1:16.7 — 15g of coffee to 250ml of water off the boil. Bloom with 40–45g of water for 30–45 seconds to let the coffee de-gas, then pour 50gm at a rate of 5g per second, wait 10 seconds then continue the same till you hit 250gmhit your total. Aim for a total brew time around 2:30–3:00. This is the method that shows off what a single origin is actually doing — floral, fruit, and acidity all come through clean. Best with: the filter/espresso single-origin range (Hadeso Natural, Hadeso Washed, Short Run releases).

  • Plunger [French press]

Coarse grind, 1:15 — 20g of coffee to 300ml of water. Stir once to saturate, steep for 4 minutes, break the crust, skim the foam, then plunge slowly and evenly. Works for the whole range, but it's where the natural and washed filter coffees really open up. Best with: Sunrise, filter/espresso single origins.

  • Moka pot [Stovetop]

Grind finer than plunger, coarser than espresso. Fill the basket level, don't tamp — a moka pot isn't an espresso machine. Hot water in the base if you can, low-to-medium heat, and listen for the shift from a steady trickle to a hiss and gurgle. Pull it off the heat straight away; a few extra seconds on the burner is where it turns bitter. Best with: Sunrise, Outlaw.

  • Cold brew

Coarse grind, 1:8 for a concentrate — steep in room-temperature or fridge water for 12–16 hours in a a plunger, then filter by push the plunger just below the pouring lip. Dilute the concentrate roughly 1:1 with water or milk over ice. Slow extraction mutes acidity and pulls out sweetness, so it suits the same origin-forward coffees as pourover. Best with: the filter/espresso single-origin range.

To increase acidity brew pour 3 x the coffee amount of 90deg water over and let it sit for 40seconds before topping it up with cold water.

  • Which Loot coffee suits which method

Sunrise and Outlaw were built for milk — espresso, stovetop, or plunger with milk is where they're strongest. The single-origin filter range (Hadeso Natural, Hadeso Washed, and whatever's running through Short Run) was roasted to be tasted black — pourover and cold brew let those flavour notes speak for themselves.
