An organic anaerobic natural from the highlands of North Western Uganda, grown at 1,400–1,800m by smallholders across the Nebbi and Zombo districts and processed at Kawacom's White Nile Wet Mill.
Cherries are hand-picked, sorted and floated, then fermented whole in sealed tanks under carbon dioxide before slow-drying on raised African beds. Women now lead much of the work here, from planting through to harvest.
In the cup: grape and green apple up front, finishing on dark chocolate.
