Las Lajas, run by third-generation producers Oscar and Francisca Chacón, is one of Costa Rica’s most respected coffee estates, known for pushing the boundaries of natural and honey processing. Their coffees are recognised globally for depth, sweetness, and vibrant fruit character.
Sustainability sits at the core of their approach. Las Lajas was among the first in Costa Rica to build a micro dry mill, dramatically reducing water use by relying on sun exposure and raised-bed drying to develop flavour. Following a major earthquake in 2008 that disrupted power and water during harvest, the Chacón family processed their entire crop as a natural — a bold decision that helped redefine Costa Rican coffee on the world stage.
This lot is produced using their signature Alma Negra process. Fresh cherries are dried in a greenhouse for 2–3 days, then moved between open sun during the day and greenhouse drying at night for 20–30 days, followed by a 60-day resting period. The result is a richly layered cup, with concentrated sweetness, with intense cherry flavour, plum and layers of choclolate on the finish.
