This remarkable Tabi coffee is produced by the Vergara family on their Las Flores farm in the Huila region, sitting at an altitude of 1,730 MASL. “Tabi” means “Good” in the native Colombian Guambiano dialect—an apt reflection of the variety’s character. This lot begins with the careful selection of pre-ripe cherries, chosen to preserve their delicate profile and prevent excessive fermentation. After meticulous sorting and alcohol disinfection, the whole cherries undergo a multi-phase fermentation process: 12 hours in GrainPro bags, followed by 24 hours of controlled oxidation in tanks. The cherries are then pulped and fermented anaerobically for 48 hours in their mucilage, enhancing sweetness and depth.

To stabilize the process, the semi-natural seeds are thermally rinsed with 50°C water to stop fermentation, then quenched in cold water to maintain microbial balance, and finally fully washed to remove any remaining mucilage. The coffee is then precision-dried for 36–40 hours to achieve an ideal moisture content of 11%, ensuring clarity, structure, and balance in the cup.
