This exceptional Red Bourbon comes from Colombia's southern Cauca region, where relatively even terrain creates stable, ideal conditions for high-quality coffee. Sourced from smallholder farmers near Granja Paraíso 92, the cherries are handpicked at peak ripeness and taken to Wilton Benitez's cutting-edge facility in Piendamó. There the coffee undergoes a carefully controlled 36-hour fermentation, then depulping, washing and meticulous drying; the work behind that clean, vibrant cup.
